Consumption Pattern of Dried Traditional African Vegetables among Rural Households in Tanzania

Vegetables are known to be nutritious and form part of almost every meal in an African set up. However, they perishable seasonal thus scarce during dry period. Drying helps extend their shelf life. The main objective the study was determine consumption pattern dried traditional vegetables (TAVs) semi-arid rural households. Dried TAVs by open sun drying solar were considered. Cross-section data collected 2016 among 244 respondents Dodoma Singida region through random sampling using semi-structured questionnaire utilized. Ordered bivariate probit estimated STATA software. results showed that access information on drying, gender, presence adults above 64 years, between 15 - children 5 14 0 4 years significant. is useful planning trainings determining consumer segment target. Strategies would enhance highly recommended.
